Bok Choy Chop Salad

One large head of bok choy, chopped finely (approx. 8 C)
2 apples, shredded in food processor
2 carrots, shredded in food processor
1 small or 1/2 large red onion, diced small

1/2 C soymilk
1/2 C raw cashews
1/4 C balsaic vinegar
1/4 C raisins
scant 1 tbsp Dijon mustard

Toss salad ingredients in a large bowl. Blend all dressing ingredients in a food processor or blender until smooth. Mix the dressing evenly into the salad and refrigerate.
