Beet Hummus

4 small or 2 large beets
1 can chickpeas
scant 1/4 C sesame seeds, or some tahini
2 tbsp water
juice and zest of one lemon
2 cloves garlic
2 tsp cumin
salt and pepper, to taste

Scrub the beets and chop into large pieces. Simmer or steam until tender. Place beets and all remaining ingredients in a blender or food processor and blend until smooth. Serve with pita, crackers, sliced cucumbers, etc.
