Roasted Applesauce

Great with latkes! The extra step of roasting yields great flavor.

3 lbs McIntosh apples
Juice and zest of 1 lemon
2 tbsp vegetable oil
1/4C maple syrup
2 tbsp sugar
1 tsp cinnamon
pinch ground allspice
1/4 tsp salt

Peel, core, and slice the apples into 1-inch chunks. Combine with all other ingredients and toss in a large bowl. Roast in a pan in the oven at 400* for 25 minutes (turning once after 15 minutes), until the apples are very tender. Puree in a blender or food processor to desired consistency and enjoy chilled, room temp, or warm.
