No-bake, blender-made, festive, and nutritious cookies. These are kitchen-sink style cookies so feel free to get crafty with the addition of chocolate chips, dried fruit, rice cereal, etc.
1 C dates, pitted, chopped, and microwaved slightly to soften
1/2 C oats
1/4 toasted nuts, I used a combination of almonds and cashews
1/4 peanut butter
1/4 C brown sugar
salt, to taste
1 tbsp melted coconut oil
heaping 1/4 C shredded coconut, plus a little extra for rolling in
Blend all ingredients. This takes patience, as a lot of start-stop-scraping is involved. The goal is to get a fairly smooth mixture, the ingredients will look speckled together. Just make sure there are not distinguishable pieces of any one ingredient. It should look dry, but if the ingredients won’t hold together when pinched, add in a tad more coconut oil or some milk. Hand roll the mixture into walnut-sized balls, then roll in extra shredded coconut. Refrigerate unti firm.
