Chocolate Chia Pudding

2 tbsp chia seeds
1 tbsp oats
1 tbsp cocoa powder
pinch of salt
1 packet stevia, or other sweetener
1/4 tsp vanilla or almond extract
tiny dash of cinnamon
1/4 tsp instant coffee granules
1/2 C milk
1/4 C water

Combine all ingredients well – it takes some time to fully incorporate the cocoa. Place in the fridge for at least 30 minutes, overnight is fine too, to allow the chia seeds to absorb the liquid and set the pudding. Give a good stir before consuming. I like sliced banana or shredded coconut on top, with a sprinkle of cocoa powder.
