This recipe is recommended for use with green beans or brussel sprouts. It is extremely fast to make and smells incredible. The sauce is reminiscent of honey-mustard.
1.5 lbs green beans, fresh or frozen, ends removed
¼ C Dijon mustard
¼ C agave
1 tbsp olive oil
1 tsp salt, or to taste
Fill a frying pan with the green beans and about ¼” of water. Steam until the beans are bright green and just tender – DON’T overdo it! Use something like a cookie sheet or large lid to keep in most of the steam, so that the top layer of beans gets steamed as well. Drain. Mix the mustard, agave, and oil in a small bowl, and pour over beans. Return the pan to the stove over fairly high heat, and toss very often with a spatula or tongs. Cook for about 4 minutes, until the sauce thickens up somewhat. Remove from the heat and sprinkle over salt before doing a final toss.
