These are pretty similar to sweet potato fries. I eat carrots almost daily, and am really glad to have found a way to enjoy them warm as the weather turns colder. This recipes serves a lone diner, so multiply as needed if making fror a group.
1/2 tsp coconut oil
1/2 tsp thyme
large pinch of salt and pepper
Discard carrot ends. Cut in half lengthwise, and then widthwise into quarters. Rub the coconut oil between your hands and try to coat all the carrots in an even layer. Spread out, non-overlapping, on some sort of non-stick baking sheet (I use clay). Sprinkle with thyme, salt, and pepper. Bake at 400* for about 17-18 minutes, until partially browned. No need to flip midway! Serve warm with ketchup.
