Sweet Potato Pancakes with Chocolate Chips

Makes 3 large pancakes.

1 1/4 C non-dairy milk
1 tsp apple cider vinegar
2 tsp flax meal
1 small or medium sweet potato, cooked and mashed thoroughly
1/2 C all-purpose flour
1/2 C wheat flour
2 tsp baking powder
1/2 tsp salt
1 tbsp brown sugar
1 tsp cinnamon
~1/2 C chocolate chips
 

Combine the non-dairy milk, vinegar, and flax. Let stand for 10 minutes. Add in all other ingredients (or start a new bowl for them while you’re waiting). Stir until just combined. Cook on a medium-heat skillet coated with earth balance. Serve with butter and maple syrup!
