Baklava Spread

I love baklava, but am sometimes reluctant to buy phyllo dough for some reason. This spread captures the best of baklava with much less hassle. I like to eat this rolled up in a wrap or tortilla, microwaved until warm. You can also shmear this on ice cream, fro yo, toast…

1 1/2 & 1/2 C walnuts
1/3 C pistachios
2 tbsp agave
1 heaping tbsp sugar
1/2 C water
giant pinch cinnamon
pinch cardamom
pinch salt

In a small pot, bring agave, sugar, water, spices, and salt to a boil. Add the 1/2 C walnuts, and all the pistachios. Lower the heat and simmer 20-25 minutes, uncovered, stirring occasionally, until the liquid is reduced by about half. In a food processor, process the remaining 1 1/2 C walnuts until they become smooth butter. Add the pot mixture to the food processor and pulse until crumbly, not smooth. Store in a glass jar in the fridge.
