Cheese Sauce

Makes about 2.5 cups. GREAT on steamed broccoli and potatoes. Double for a big batch of nachos. Use just a little before nachos get baked, and put the rest of the sauce on only about 5 minutes from the end of their bake-time. Recently made a salad with this sauce, refried beans, salad, a bit of balsamic dressing, tomato, and avocado. Deeeelish.

1/2 C water
1 tbsp fresh lemon juice
3 tbsp tomato paste (or 2 tbsp ketchup)
1/4 C cashews (or almonds)
3/4 tsp onion powder
1 tsp salt
1/4 C nutritional yeast
3/4 C boiling water
1 tbsp corn starch mixed with 1/4 C cold water

Put all ingredients except boiling water and corn starch mixture in the vita-mix (or foor processor) and blend thoroughly, scraping sides a few times. Continue blending, if using a vita-mix, until hot and steamy. Otherwise, you’re going to have to heat this up on your own afterwards while you ask yourself why you don’t have a vita-mix. In a steady stream, add in the boiling water, blend well. Add corn starch mixture and continue to blend for a minute, while mixture thickens. Use immediately, or refrigerate – this stuff reheats very well.
