Scrambled Tofu

Lots of room here for variations. Try mixing in broccoli, bell pepper, shredded carrot, whatever!

3 garlic cloves, minced or pressed
1 small onion, diced
2 tbsp olive oil
1 lb extra-firm tofu, drained
¼ C nutritional yeast
fresh black pepper, to taste

2 tsp cumin
1 tsp thyme
1.2 tsp turmeric
1 tsp salt
3 tbsp water

Mix together the spice blend in a small cup. Preheat a large pan over medium-high heat. Sauté the garlic and onion in olive oil for about 3 minutes. Using your hands, break up the tofu into bite-sized pieces and sauté for about 10 minutes, stirring often. The water should cook out and not collect very much at the bottom of the pan. Conversely, if the scramble seems dry, add a splash of water until it’s moist. Add in the spice blend, nutritional yeast, and pepper. Cook for about 5 more minutes, serve.
